Introduction
Dragon fruit (Pitahaya) grows on the Hylocereus cactus whose flowers only open at night and is native to southern Mexico and Central America. Its taste has been described as a slightly sweet cross between a kiwi and a pear.

Contains protein and fibre and is rich in antioxidants. Comprised of vitamins A and C. Minerals including calcium, and iron, and is abundant in magnesium.
History
Early missionaries and explorers brought dragon fruit to Australia, the Middle East, and some regions of Asia after it was first discovered in Central America centuries ago. Most accounts attribute its introduction to the French, who brought it to Vietnam more than a century ago. It was initially raised in Vietnam for the king, became popular among the affluent, and is currently the country’s top fruit export.
Regions
Although it’s difficult to pinpoint the exact native range, dragon fruit is thought to be indigenous to Central America, with its range reportedly extending from Southern Mexico through Belize, Guatemala, El Salvador, and Costa Rica.
Flavours & Texture
The juicy, spongy, yet dense pulp has a mildly sweet flavour with hints of watermelon, kiwi, berry, and pear, and occasionally a very slight sourness. Eating the fruit’s edible seeds provides additional nutrition because they are rich in polyunsaturated fatty acids like omega-3 and omega-6.
How to eat?
Slice the fruit lengthwise and scoop out the flesh. You could also use a knife to cut and peel off the leathery skin.
Preparation
Dragon fruit is best used raw. Dragon fruit is frequently juiced for drinks and cocktails or blended into smoothies. It can be used to flavour ice cream, sorbet, and other desserts as well as to make jams.
The soft yet dense texture will hold its shape nicely when cut, so it can be diced into fruit salads. It can also be used in savoury salads, and pairs well with seafood, such as scallops and white, flaky fish like mahi-mahi.
Tips
Ripe Dragon fruit can be kept at room temperature for a few days, or refrigerated in a sealed container for prolonged use.
