The only way to ruin a mangosteen is to overthink it. Twenty minutes in the fridge, a sharp knife around the equator, twist the halves apart, lift the segments out with a spoon. Serve as a course, not a snack.
You need
- Chilled mangosteen — one per person minimum
- A small bowl for the empty husks
Method
- Refrigerate for 20 minutes before serving — the cold lifts the floral notes.
- Score around the equator with a small sharp knife, just deep enough to cut the husk.
- Twist gently. The halves come apart cleanly when the fruit is properly ripe.
- Lift the white segments out with a spoon. Spit the seeds — they’re bitter and inedible.
