People expect cacao to taste like chocolate. The white pulp around the seeds tastes nothing like chocolate — it’s bright, tropical, perfumed. This is the simplest way to drink it.
You need
- The pulp from one fresh cacao pod (suck it off the seeds)
- 200ml plain yogurt
- One teaspoon of honey
- A pinch of cardamom
- Ice
Method
- Blend pulp, yogurt, honey and cardamom with ice until smooth.
- Strain through a fine sieve to catch any seed fragments.
- Serve in a chilled glass. The pulp’s aromatics dissipate fast — drink within 10 minutes.
