The way salak is served across Indonesia — minimal prep, bright dressing, salt to lift the pineapple-molasses sweetness.
You need
- Six snake fruits
- The juice of one lime
- A teaspoon of flaky salt
- A few mint leaves
Method
- Pinch the pointed tip of each snake fruit until the scales crack. Peel like a hard-boiled egg.
- Slice the flesh away from the dark seed. Cut into chunks.
