About Atemoya
Atemoya (Annona × atemoya) is the deliberate hybrid of two Annonaceae cousins — cherimoya (South American highland) and sugar-apple (lowland tropics) — bred in South Florida in 1908 to combine cherimoya's perfumed flavour with sugar-apple's tolerance for hotter climates. Today's commercial production sits in Vietnam, Israel and Australia.
The fruit looks knobbled and prehistoric on the outside, but inside it's spoonable cream — pineapple, banana, vanilla and pear all at once, with a long aromatic finish. Black seeds are scattered through the pulp; spit them, they're inedible.
Ripeness is the whole game. Atemoya is climacteric — it leaves the orchard hard and ripens off the tree. Press gently with your thumb; when the skin yields like a ripe avocado, halve, scoop, eat. Two days at room temperature, then refrigerate for one more before quality drops.
