About Mamey Sapote
Mamey sapote (Pouteria sapota) is the showstopper of the Sapotaceae family — a torpedo-shaped fruit native to southern Mexico and Central America, where it has been cultivated since pre-Columbian times. The Mayans used the fruit for both food and the seed, ground into pixtle, for cocoa-like drinks. Modern production is concentrated in Mexico, Cuba and Guatemala.
The outside is rough brown skin; cut it open and the inside reveals dense salmon-orange flesh surrounding a single large mahogany seed. The flavour is unique — sweet-potato meets pumpkin pie meets almond-marzipan, with a smooth-but-grainy texture closer to cooked custard than fresh fruit.
Ripe when the skin scratched at the stem shows orange rather than green, and the fruit yields slightly under thumb pressure. Halve lengthways, scoop the flesh from the skin with a spoon, work around the seed. Eats cold; pairs beautifully with a squeeze of lime and a pinch of salt.
