About Yellow Cactus Fig
Yellow cactus fig (Opuntia ficus-indica) is the pale cultivar of the prickly pear, milder and less aromatic than its red and magenta cousins but with the same essential structure — a spiny skin around a translucent flesh shot through with small edible seeds. Grown commercially across Mexico, Sicily, Malta and South Africa, with August through November as the peak window.
The skin is pale yellow with a slight peach blush at full ripeness, and (like all prickly pears) covered in tiny glochid spines that must be handled with gloves before peeling. Inside, the flesh is honey-coloured rather than magenta, with a watermelon-honeydew flavour profile and considerably less staining than the red cultivar — making it the friendlier choice for unfamiliar palates and white kitchen surfaces.
