The family
Cactaceae plants survive on almost no water and pay you back in colour. Dragon fruit (Hylocereus, Selenicereus) and prickly pear (Opuntia) are the family's edible stars — flesh ranges from snow-white to electric pink to golden, all dotted with tiny crunchy seeds. The flavour is restrained rather than loud: clean, melon-like, refreshing without ever tipping into cloying sweetness.
